Fluffy Protein Pancakes without Banana

This easy protein pancake recipe is filling, delicious, and a great way to start the day!  These protein pancakes are gf, df, vegan, and egg-free -AND- are made without bananas too. The perfect weekend breakfast to enjoy with the family or share with friends!

Ingredients Needed:

- Rolled Oats - Vanilla Protein Powder - Unsweetened Vanilla Almond   Milk - Unsweetened Applesauce - Apple Cider Vinegar - Baking Powder - Baking Soda - Salt

Add rolled oats to a high-powered blender

Blend for 10-15 seconds to break down into a fine flour

Then add the protein powder...

...the baking powder, baking soda, and salt...

...the unsweetened applesauce...

...the unsweetened vanilla almond milk...

*Note: regular unsweetened almond milk works great too!

...and the apple cider vinegar to the blender

Blend until a smooth batter is formed...

...scraping down the sides of the blender as needed to incorporate all ingredients

Let the batter rest for 8-10 minutes (*do not skip this step!*) before pan-frying

Cook pancakes on a greased skillet or griddle for 1-2 minutes per side until golden brown

Top protein pancakes with your favorite toppings, like pure maple syrup, berries, etc.
