Homemade Zucchini Bread

This homemade zucchini bread recipe is the best of the best! This whole wheat version is a must-bake when zucchini is abundant. Recipe is great fresh and loaves can also be frozen for later.

Ingredients Needed:

– large eggs – ground flaxseed – water – brown sugar – granulated sugar – vegetable or canola oil – fresh zucchini  – vanilla extract – all-purpose flour – wheat germ – whole wheat flour – salt – baking soda – baking powder – cinnamon – chocolate chips

1. Pre-heat oven and prep bread pans.  2. Wash and prep your zucchinis 3. Make your flax “eggs” 4. Mix together wet ingredients, sugar, and zucchini 5. Add in dry ingredients

6. Divide batter between loaf pans 7. Bake 8. Cool loaves in their pans for  10-15 minutes, then turn out onto a cooling rack 9. Slice and serve 10. Store leftovers - see post for how to store in fridge or freezer
