Cauliflower Mashed Potatoes Recipe

This cauliflower and potato mash recipe is a healthy twist on the ultimate comfort food. Easy to make and great paired with all kinds of foods.  A must-try side dish any time of year!

Ingredients Needed:

– baby gold potatoes – fresh cauliflower  –  broth of choice – water – salted butter – sour cream – salt  – pepper – fresh chives – optional: other finely chopped herbs   like parsley, rosemary, and/or thyme

STEP 1 - Place potatoes and cauliflower in a large saucepan with broth and water.

STEP 2 - Boil until potatoes are fork tender (~15-20 minutes)

STEP 3 - mash the cooked potatoes and cauliflower with broth, butter, and sour cream until desired consistency is reached. Add additional reserved liquid if needed. Stir in chives, salt, and pepper.

STEP 4 - Serve and enjoy!
