Puff Pastry Egg Tarts

Have you been looking for a fun brunch option to serve for Mother's Day? Or perhaps you're having friends or family over and you want to wow them a bit... These puff pastry egg tarts are the perfect at-home brunch recipe!

Ingredients Needed:

Frozen Puff Pastry Sheets Flour (for rolling) Medium Eggs Coppa Ham (aka Capocollo or Capicola) Shredded Parmesan Cheese Salt Pepper

Cut the sheet of puff pastry dough into four equal-sized square

*Note: Your puff pastry will need to be thawed prior to starting

Place each puff pastry square onto the prepared baking sheet

*Make sure to brush off any excess flour prior to doing this. Space at least 1" apart.

Place a ramekin in the center of each puff pastry square and add an egg wash on the exposed pastry

Bake the puff pastry with the ramekins for 10 minutes, until very lightly browned and puffed up to create a well.

Remove the ramekins to expose the wells in the puff pastry

*Note: if they stick, gently run a spoon around the edge of the ramekin to loosen it

Add a slice of coppa ham and sprinkle of shredded parmesan cheese to each square

*Note: plascing the coppa at the edge leaves more room for your eggs!

Very carefully pour a cracked egg into each well. Top each egg with a pinch of salt and pepper.

Gently place the tray back into the oven and bake for another 10 minutes (or until the eggs are set to your liking).
