Prosciutto Asparagus Puff Pastry Bundles

This elegant and easy puff pastry recipe is perfect for a spring brunch, dinner, Mother's Day, or as a fancy appetizer! Also a great option for those looking for baby shower food ideas or bridal shower food ideas.

Ingredients

  • 1 package frozen puff pastry, thawed (2 sheets)
  • 12 slices prosciutto
  • 12 slices swiss cheese
  • 1 bundle asparagus, ends trimmed (approx. 1lb)
  • 1 large egg, beaten

Instructions

  • Preheat oven to 425°F and line a baking sheet with parchment paper. Set aside.
  • On a lightly floured surface, roll out the thawed puff pastry, 1 sheet at a time, until the rectangle is dough is about doubled in size. Cut each sheet of puff pastry into 6 equal sized squares.
  • On each square of puff pastry layer your toppings. First place 1 slice of prosciutto folded in half to fit on the square, then 1 slice of swiss cheese, and finally 3-4 stalks of asparagus at a diagonal.
  • Fold the filled puff pastry squares into your bundle shape by folding one corner of your puff pastry square across your asparagus, then fold the opposite corner over the top. Lightly pull that top corner of puff pastry to just tuck under the bottom of the bundle, and lightly press the palm of your hand on top of the bundle to help seal the dough. Once rolled, transfer your bundle to your lined baking sheet.
  • Using a pastry brush, egg wash any exposed puff pastry.
  • Bake your prosciutto asparagus puff pastry bundles for 14-16 minutes, until the puff pastry is golden brown.
  • Serve immediately.
  • Store any remaining puff pastry bundles  in an air-tight container in the refrigerator for 1-2 days.

Notes

*Modification to make this recipe vegetarian: Leave out the prosciutto. Turning these into vegetarian puff pastry bundles is easy and still tastes awesome!
 
*Alternative cheese options: In addition to swiss, gouda, gruyere, or brie would all be excellent options in this recipe.
 
*How to reheat leftover puff pastry bundles: The oven is definitely the best way to reheat these prosciutto asparagus puff pastry bundles. Reheat in a 350°F oven for about 10 minutes (or until warm).
