Fruit Salad with Honey Lime Dressing

This healthy fruit salad with honey lime dressing is a great side with any meal! Also a great option to prepare for a wide variety of occasions such as brunch, bridal showers, baby showers, or summer parties and potlucks.

Ingredients

  • 1 pound fresh strawberries, rinsed and sliced into bite-sized pieces*
  • 1 pint fresh blueberries, rinsed*
  • 1 mango, peeled, fruit removed from the stone and cubed*
  • 1 lime, zested and juiced
  • 2 Tablespoon honey
  • Optional garnish: fresh mint

Instructions

  • Prepare the fruit. Rinse and chop the strawberries, peel and chop the mango, and rinse the blueberries. Zest and juice the lime.
  • Place the cut up strawberries, mango, blueberries and lime zest into a large mixing bowl.
  • In a separate bowl, prepare the dressing by mixing together the fresh lime juice and honey. (Note: microwaving the honey and lime juice mixture for about 10 seconds helps the honey to dissolve and allowing the dressing to mix together easier).
  • Drizzle the honey lime dressing over the fresh fruit and toss until evenly coated.
  • Serve immediately and enjoy!

Notes

Recipe Variations & Substitutions
You can change up the combination of fruits used in this easy fruit salad recipe if desired. For the best results, maintain the same ratio of 4-5 cups of fresh fruit. 
  • Good fruit salad fruits include: strawberries, blueberries, mangos, red grapes, green grapes, ripe kiwis, fresh pineapple, and mandarin oranges.
  • Fruits that don’t work as well in fruit salad include: raspberries (they get squished), bananas (also get squishy), frozen fruit (gets mushy and watery once thawed).
Try using a different citrus for your dressing. Option to use fresh-squeezed lemon juice or orange juice for your dressing if desired.
Storage
While fruit salad tastes best the day it's made, it can be stored in an airtight container in the fridge for up to three days.
