Summer Vegetable Risotto 

Summer vegetable risotto recipe is a great way to eat the seasons! This creamy risotto is packed with delicious summertime produce. A perfect dish for a special dinner or date night!

Ingredients Needed:

– salted butter – extra virgin olive oil – green onions – kale – asparagus – Arborio rice – white wine – broth of choice – Zest of 1 lemon – lemon juice – grated parmesan – Salt and pepper to taste

1. Blanch asparagus 2. Sauté green onion and kale 3. Toast the rice 4. Add the wine

1. Gradually add the broth 2. Add in the lemon zest and lemon juice 3. Stir in parmesan and cooked asparagus 4. Serve and enjoy!
