Recipe Variations and Substitutions
Replace 1-2 Cups of the Lucky Charms with Rice Krispies. Cut the sweetness level a little bit by simply replacing 1-2 Cups of the Lucky Charms with Rice Krispies.
Add some white chocolate. If you'd like to add a little more flair (and even more sweetness) adding a drizzle of melted white chocolate over the top of your bars or dip your bars in melted white chocolate once cut into squares.
Use the stovetop. If you don't want to use the microwave method outlined, you can still make this recipe on the stovetop! Simply melt the butter and mini marshmallows on the stovetop in a large saucepan over low heat.
Expert Tips
Use fresh marshmallows! Old stale marshmallows will produce hard and stale marshmallow treats!
If you’re worried about your bars sticking to the pan, you can line your pan with parchment paper or lightly grease it with nonstick cooking spray or butter if desired.
I use a rubber scraper to press the mixture into the pan. Spraying a little non-stick cooking spray onto a rubber scrapper is super helpful to prevent sticking! You could also use your fingers. To do so, dip your fingers into water to prevent the mixture from sticking to your hands.
It’s important to let your treats set for 1 hour (or longer). This will make cutting them into perfect little squares much easier!
