Mediterranean Pasta Salad

This Mediterranean pasta salad recipe gives a healthy twist to a classic summer side dish. This vegetarian pasta salad is a great option for potluck parties, tailgates, backyard barbeques, & more!

Ingredients Needed (Part 1):

PASTA SALAD – whole wheat pasta – cherry tomatoes  – mini English cucumbers  – Kalamata olives – fresh parsley – feta cheese

Ingredients Needed (Part 2):

DRESSING – olive oil – white wine vinegar – lemon juice – pure maple syrup – Dijon mustard – Italian Seasoning – garlic powder – pinch of salt and pepper

1. Cook pasta to al dente according to package directions. Rinse with cold water and place in a large bowl. If you're still chopping the other ingredients, place the bowl of pasta in the fridge to stay cool. 2. While pasta is cooking, chop tomatoes, cucumbers, olives, and parsley. Set aside.

3. Place all dressing ingredients in a jar & shake to combine. 4. Place all ingredients in the large bowl with the pasta & stir to evenly coat the pasta and distribute the veggies throughout. 5. Chill until ready to serve.
