Walking Taco Casserole

This walking taco casserole recipe takes everything you love about a walking taco and turns it into a scoopable, 30 minute weeknight dinner. No individual chip bags, no juggling, no mess. Just brown the beef, build it in one pan, and let the oven do the rest. We also layer the corn chips on top of the cheese rather than burying them underneath, which is the difference between chips that stay crunchy and chips that go soft.

Who else grew up with walking tacos? I have such specific memories of these at show choir competitions in high school, eating one out of the bag with a plastic fork between performances. They are fun, easy, and approachable, which is exactly why they show up at county fairs, concession stands, and school events all over. But on a regular Tuesday, nobody wants to mess around with a dozen little bags of Fritos. This version gets you there without the production, and I’m so excited to add it to our 30-minute dinner recipes rotation!.

We kept the base recipe pretty basic on purpose so it works for kids and adults alike. There is a whole variations section below if you want to spice things up. We did add black beans and diced tomatoes to the filling, which stretch it further and bring some protein and fiber along with them, so the meal feels a little more substantial than beef and cheese alone.

You’ll Love This Easy Taco Casserole

On the table in about 30 minutes. Most of that is hands off while it bakes. This is a real weeknight dinner, not a weekend project.

The chips actually stay crunchy. Layering them on top instead of underneath everything keeps them crisp instead of soggy, which is the whole point of a walking taco.

Kid friendly and adult friendly. The base is straightforward enough that picky eaters will go for it, and everyone customizes with their own toppings at the table.

Beans and tomatoes bulk it up. Black beans add protein and fiber and help one pound of beef feed more people, which is never a bad thing.

What Is a Walking Taco?

If you did not grow up with these, a walking taco is taco fillings served right in a single serving bag of corn chips. You cut the bag open, spoon in seasoned beef and cheese, pile on whatever toppings you want, grab a fork, and eat it while you walk. Hence the name.

They are a fixture at fairs, football games, and school concession stands, largely because they require no plates and no silverware beyond a fork. That is still where walking tacos shine. If you are hosting a party, a graduation open house, or feeding a crowd of kids, the individual bags are the right call, since everyone builds their own and there is nothing to wash afterward.

For an easy weeknight meal on a Tuesday, though, the casserole is the better version. You get everything that makes a walking taco good, the seasoned beef, the melted cheese, the salty crunch, and the pile of toppings, in something you can set in the middle of the table and scoop onto plates.

Ingredients for Frito Taco Casserole

Ingredients needed to make our walking taco casserole with fritos.
  • Olive oil. Just enough to get the beef and onion going in the skillet.
  • Ground beef. The foundation. We use 85/15 or 90/10 percent lean ground beef so there is enough fat for flavor without resulting in a greasy casserole.
  • Yellow onion. Cooked down with the beef, it adds a savory base note that you would miss if it were not there.
  • Black beans. Fill out the filling, add protein and fiber, and make a pound of beef go further. Drain and rinse them first.
  • Petite diced tomatoes. Bring moisture and a little acidity to balance the richness.
  • Taco seasoning. Does all the flavor work. Use your favorite store bought packet or a homemade blend.
  • Corn chips. Fritos are the classic choice for a walking taco. They go on top so they stay crunchy in the oven.
  • Shredded cheese. Cheddar, a Tex-Mex blend, or Monterey Jack all melt well here. Shredding your own cheese from the block gives you the best melty cheese vs. the pre-shredded bags which include a coating to keep them from clumping.
  • Your favorite taco toppings. Shredded lettuce, diced tomatoes, green onions, black olives, avocado, jalapeno, sour cream, guacamole, cilantro, pico de gallo, salsa, lime wedges, hot sauce. Set them out and let everyone build their own. You could also add a dollop of our avocado cottage cheese dip on top for some extra protein.

Helpful Equipment

You need a large skillet for browning the beef and a 9×9 glass or ceramic baking pan for assembling. An 8×8 works too if that is what you have. Glass and ceramic both hold heat well and go straight from the oven to the table, which means one less dish to wash.

How to Make Taco Casserole with Ground Beef

Preheat and prep. Preheat your oven to 375°F and grease a 9×9 baking pan.

Brown the beef and onion. Heat the olive oil in a large skillet over medium heat. Add the ground beef and minced onion. Cook until the beef is browned and the onion is tender, about 6 to 7 minutes. Drain off any excess fat.

Build the filling. Stir in the black beans, diced tomatoes, and taco seasoning. Bring to a simmer and cook until thickened, about 2 to 3 minutes, stirring constantly.

Transfer to the pan. Spoon the ground beef mixture into your prepared baking pan and spread it into an even layer.

Add the cheese. Sprinkle the shredded cheese evenly over the top of the beef.

Top with corn chips. Spread the corn chips over the cheese in an even layer.

Bake for 10 to 15 minutes. Pull it when the cheese is melted and bubbly. Do not go much longer than that or the chips will start to soften.

Scoop. Once it’s cooled a few minutes, scoop portions of the taco casserole onto plates.

Serve with toppings. Set out your favorite toppings and let everyone build their own scoop.

Layered Taco Casserole Variation Ideas

  • Swap the chips. Doritos or regular tortilla chips work in place of the Fritos, and this comes down to personal preference. At a real walking taco bar you usually see both Fritos and Doritos as an option. I asked my husband which he preferred and he said Fritos, because then we can at least pretend we made the healthier choice. Whatever you have to tell yourself…
  • Use Rotel for more heat. A can of diced tomatoes with green chiles in place of the plain diced tomatoes adds a little kick. A standard walking taco is not dressed up much, so this is an easy way to make it feel a bit more grown up.
  • Change the meat. Beef is the standard here, but ground turkey or ground chicken both work. It will shift the flavor, so if that is what you like, go for it. We love a good turkey taco filling, like we put on our taco stuffed sweet potatoes or in our ground turkey tacos.
  • Try different beans. Pinto beans or kidney beans work just as well as black beans if that is what is in your pantry.
  • Add corn. A cup of drained whole kernel corn stirred into the filling adds a little sweetness and a nice bite.

Expert Tips for Fritos Taco Casserole

Do not overbake it. Fifteen to twenty minutes is all you need, just until the cheese is melted and bubbly. The longer it sits in the oven, the softer those chips get, and crunchy chips are the whole reason this works.

Do not crowd the skillet. If the pan is too full, the beef steams instead of browning, and you lose a lot of flavor. Use a large skillet or brown the beef in two batches.

Keep extra chips on hand for serving. Some people like an extra handful of chips scattered on top of their portion of walking taco bake right before eating. It is an easy way to add crunch back to leftovers, too.

How to Store and Make Ahead Walking Taco Casserole

You can assemble the beef filling up to 24 hours in advance and keep it covered in the refrigerator. Do not add the cheese and chips until right before it goes in the oven, or the chips will be soft before the casserole ever bakes. If you are baking it straight from the fridge, add 5 to 10 minutes to the baking time.

Leftovers keep in an airtight container in the refrigerator for up to 3 days. The chips will soften as it sits, which is unavoidable, so reheat portions in the oven or an air fryer rather than the microwave if you want to bring back some texture. A fresh handful of chips on top helps too.

The beef filling freezes well on its own for up to 3 months. Cool it completely, store it in a labeled freezer-safe container (or put it in a disposable aluminum pan like we do with our chicken enchiladas casserole that we prep for freezing), then thaw in the refrigerator overnight and assemble with fresh cheese and chips when you are ready to bake. I would not freeze the fully assembled casserole, since the chips do not come back from it.

Taco Casserole Recipe FAQs

Why do the chips go on top instead of the bottom?

A lot of walking taco casserole recipes layer the chips underneath the beef, which means they are sitting in moisture the entire time they bake. Putting them on top of the cheese keeps them out of the liquid and gives you that crunch on every scoop, which is what a walking taco is supposed to be.

Can I make this ahead of time?

The filling, yes. Make it up to a day ahead and refrigerate it. Hold off on the cheese and chips until you are ready to bake, and add a few minutes to the bake time if the filling is cold from the fridge.

Can I double this for a crowd?

Yes. Double everything and use a 9×13 pan instead. The bake time stays about the same since the casserole is not much deeper, but check that the cheese is melted and bubbly before you pull it.

What should I serve with it?

Honestly it is a full meal on its own, especially with beans in the filling. If you want to round it out, a simple green salad on the side works well, steamed veggies, or anything else you would normally serve as a side on taco night.

  • 2 teaspoons olive oil
  • 1 pound lean ground beef (85/15 or 90/10 blend)
  • ½ medium onion, minced (about ½ cup)
  • 1 , 15 ounce can petite diced tomatoes, slightly drained

  • 4 Tablespoons taco seasoning
  • 1 Cup shredded cheese (sharp cheddar, colby jack, tex-mex blend, etc.)
  • 2 Cups Fritos chips
  • Taco toppings of choice, such as: shredded lettuce, diced tomatoes, cilantro, green onions, black olives, avocado, jalapeno, sour cream, guacamole, pico de gallo, lime wedges, hot sauce.

Instructions
