Apple Grilled Cheese Sandwiches

This apple grilled cheese sandwich takes everything you love about a classic comfort food and elevates it with crisp, sweet apple slices that add incredible flavor and texture! The combination of melty cheese, buttery toasted bread, and fresh apple slices creates the ultimate fall sandwich that’s both nostalgic yet sophisticated.

We’ve been grilling up this favorite fall sandwich for the past 5+ years, and it never gets old. My husband has fond memories of the classic Wisconsin after-school snack of sharp cheddar paired with apple slices, and this sandwich is really just an adult twist on that beloved combination. Sometimes the best recipes are simply childhood favorites dressed up a little, and this one is especially delicious when you use fresh, crisp apples from a day of apple picking!

What makes this recipe special is the attention to quality ingredients and technique. I’ve tested this with different breads, cheeses, and apple varieties to find the combinations that work best. The key is using good bread (we love sourdough or a specialty loaf from our local bakery), high-quality cheese that melts beautifully, and crisp apples that hold their shape when heated.   • Butter. Creates that golden, crispy exterior we all love in grilled cheese while adding rich flavor and helping achieve even browning.
  • Cheese of choice. The star of any grilled cheese that needs to melt well and complement the apple. Good options include cheddar, gruyere, havarti, gouda, or high-quality American cheese. The photos show us using a specialty Wisconsin cheese (and a personal favorite!): Cheddar Gruyere from Wood River Creamery.
  • Apple. Adds sweetness, crunch, and fresh flavor to our sandwich that compliments the richness of the cheese. Selecting a variety that hold it’s shape when heated is essential.

Best Apples for Grilled Cheese Sandwiches

For grilled cheese, you want apples that will hold their shape to maintain their texture when heated. Honeycrisp and Granny Smith are both excellent choices as Honeycrisp offers sweet flavor with excellent crunch and Granny Smith provides a lovely tart flavor that plays nicely with the rich cheese. Personal favorites that work well in this recipe include Gala, Haralson, and Pink Lady apples. Other common varieties that hold their shape well for cooking that you can try in this recipe include: Braeburn, Fuji, Honey Gold, Pippin, Cortland, and Golden Delicious.

If you’re going apple picking, ask the folks at the orchard what varieties they have that are good for cooking and baking. You can say you’re looking for something that would hold up well in an apple crisp because they’ll know exactly what you’re looking for! Local orchards often grow different varieties of apples that you might not see in the grocery store.

Avoid softer apples like Red Delicious or McIntosh. Also skip apples that are overly ripe as they are more likely to become mushy when heated.

Helpful Equipment

A good flipper (spatula) is essential for successfully flipping your grilled cheese without losing the filling. Using a silicone flipper on a non-stick pan is a good choice as it helps prevent scratching the pan surface.

How to Make Autumn Grilled Cheese

Prep ingredients. If using block cheese, slice it into thin strips (about 8-10 slices per sandwich) and wash, core, and slice apple into thin strips (about ⅓ of a medium apple per sandwich).

Assemble the sandwich. Heat a skillet over medium heat. Place one slice of bread butter-side down in the pan and add the 1st layer of cheese.

Next add a layer of apple slices.

Then add a 2nd layer of cheese.

Top with the 2nd slice of bread, butter side facing up. We like to place a pan lid over the skillet to help the cheese melt.

Cook and flip. Cook until the bottom slice of bread is golden brown. Using your flipper, carefully flip the sandwich and cover again to continue cooking the second side. Remove when the second side is golden brown and cheese is fully melted.

Grilled Cheese with Apple Variation Ideas

  • Mayo instead of butter. If you’re on team mayo vs. team butter for grilled cheese, replace the butter with a thin layer of mayonnaise instead. It creates an equally golden, crispy exterior with a slightly different flavor.
  • Add bacon. Include 2-3 strips of crispy bacon for a little meat, crispy texture, and a nice salty pop to compliment the apples and cheese.
  • Caramelized onions. Include a thin layer of caramelized onions for extra sweetness and depth of flavor. You could also add a smear of caramelized onion jam!
  • Herb additions. Add a little fresh thyme or some finely chopped sage leaves between the cheese layers for an earthy fall flavor.
  • Honey drizzle. Add a light drizzle of honey over the apple slices before adding the top cheese layer for a little more sweetness.

Expert Tips for Making The Best Apple Grilled Cheese Sandwich

Medium heat is key. Too high heat will burn the bread before the cheese melts, too low won’t create proper browning.

Quality ingredients matter. Good bread and cheese make a noticeable difference in the final result!

Thin, even apple slices. Keep apple slices thin so they heat. Having slices that are too thick will make the sandwich tricky to flip and the final texture won’t be as enjoyable.

Cover the pan. Using a lid helps create steam that melts the cheese more evenly and quickly.

Don’t rush the flip. For the best results, wait until the first side is properly golden before flipping.

Ingredients
  

  • 2 slices of bread (high-quality bread such as sourdough, artisan bread, or a hearty whole grain)
  • cheese of choice, thinly sliced* (about 8-10 slices from a block. 3-4 slices from a package)
  • ⅓ medium apple, thinly sliced*
  • 1 Tablespoon salted butter

Instructions
 

  • Prep ingredients. If using block cheese, slice into thin strips (about 8-10 slices per sandwich) and wash, core, and slice apple into thin strips (about ⅓ of a medium apple per sandwich).
  • Butter the bread. Spread butter on one side of each piece of bread, covering edge to edge for even browning.
  • Heat skillet and assemble the sandwich. Heat a skillet over medium heat. Place one slice of bread butter-side down in the pan. Then Add the first layer of cheese slices, then a layer of apple slices, then another layer of cheese slices. Top with the second piece of bread, butter-side facing up.
  • Cover and cook. Cover with a pan with lid to help the cheese melt evenly. Cook until the bottom slice is golden brown (about 2-4 minutes).
  • Flip and continue to cook. Using your flipper, carefully flip the sandwich and cover again to continue cooking the second side (about 2-4 minutes)..
  • Serve immediately. Remove when the second side is golden brown and the cheese is fully melted. Slice in half and enjoy while hot.
