You know I love DIY simple syrup recipes. Simple syrup is the best way to sweeten cold drinks (like iced coffee, iced tea, cocktails, etc.) because there is no grainy texture. With just a few basic ingredients and a couple of simple steps, you can have your own simple syrup ready to enjoy in about 10 minutes! This blueberry simple syrup recipe is no different, except that it has a nice fruity twist of course!
This easy blueberry syrup recipe is the perfect way to add robust blueberry flavoring to your drinks. I love to use this syrup to make blueberry cocktails like this refreshing blueberry vodka lemonade cocktail. Use it to make a blueberry lemonade, a blueberry Italian soda, and so much more.
It’s also a great topping for a big stack of pancakes, waffles, or French toast casserole. I personally love this one my go-to whole wheat waffle recipe with some fresh fruit and whipped cream, yum!

What is Simple Syrup?
Simple syrup is a liquefied form of sugar that is often used to sweeten cocktail recipes, mocktail recipes, iced teas, and iced coffees. Using a liquid sweetener allows iced drinks to be sweetened without adding a grainy texture, creating a more enjoyable sip. A plain simple syrup is made with equal parts water to sugar.
Why You’ll Love This Recipe
Sweet blueberry flavor. Fresh blueberries create a wonderful burst of flavor in this homemade simple syrup.

Ingredients Needed
Granulated Sugar. Granulated sugar is a standard ingredient for simple syrup recipes.

See recipe card below for a full list of ingredients and measurements.
Recipe Variations and Substitutions
Use frozen blueberries. If blueberries aren’t in season, frozen blueberries will work just fine. Just swap frozen berries one-for-one for the fresh berries in the recipe card.
Use more blueberries. I’ve found that using 1 cup of blueberries creates a fabulous syrup. However, if you want to toss a whole pint in I’m not going to stop you. This will just add more blueberry flavor and natural sweetness to your syrup.
Add lemon. You can also add a splash of lemon juice (about 1 teaspoon) to your blueberry syrup if desired. Doing this can cut the sweetness a smidge if that is your preference.
Step-By-Step Instructions
Step 1: Add the granulated sugar, water, and blueberries to a small or medium saucepan and stir.
Step 2: Simmer over medium heat, stirring occasionally and smashing blueberries to help release juices, until the sugar dissolves (approximately 10 minutes).
Step 3: Remove from heat and allow the syrup to cool and steep with the berries in it for 30 minutes – 1 hour.
Step 4: Pour room temperature liquid through a fine mesh strainer into a bowl or liquid measuring cup to remove the fruit and any seeds that may have been released from the berries during cooking.
Step 5: Store strained syrup in an air-tight container in the fridge for 1-2 weeks.
PRO TIP: Do NOT throw away the blueberries that you used to make your syrup. The berries you strain out of the liquid are fantastic served over ice cream, in oatmeal, or with yogurt! Or if you’re my husband, just enjoy them straight with a spoon.
Storage
Store your homemade blueberry simple syrup in an airtight container in your fridge for up to two weeks. I like to use a sealed glass bottle when making my own simple syrups. However, you can use an upcycled glass jar or a mason jar for storage too!
Helpful Equipment
A fine mesh sieve is super helpful for straining out the berries from this recipe! I actually end up using mine a ton in my kitchen, so would say it’s a great addition to your kitchen tools if you do not have one. Alternatively, you could use a slotted spoon to remove the fruit form your berry syrup.
