Sharing is caring!

Jump to Recipe

Enhance your morning coffee experience with this delightful maple cinnamon coffee recipe! It’s easy to make, tastes delicious, and has a nice boost of nutrition from the addition of collagen. Plus, maple syrup in coffee is a wonderful way to sweeten your coffee naturally.

I love coffee just about any way you serve it. While I love making fancy Starbucks copycat recipes, adding a few subtle flavors like maple and cinnamon into my coffee is really my favorite way to go for my daily coffee fix.

Adding collagen to coffee is another great way to add some nutrition and protein to your morning with minimal effort! This collagen coffee recipe is a great everyday coffee, and one that I drink several times a week!

Really lean into your love of cinnamon by pairing this coffee with our cinnamon scones recipe too!

Cafe Au Lait vs Latte

‘Cafe au lait’ is the French way to say ‘coffee with milk’. A cafe au lait is made with strong brewed coffee and steamed milk, and most often served with equal parts coffee to milk (there is no hard and fast rule on this ratio though).

A latte on the other hand is made with espresso, steamed milk, and topped with foamed milk. A latte will generally contain 1-2 ounces of espresso and 8+ ounces of milk.

Why You’ll Love This Maple Coffee Recipe

Level of difficulty: Easy.

Flavor: Coffee accented with hints of cozy cinnamon and sweet maple.

Time: It will take you less than 5 minutes prepare your cinnamon and maple syrup coffee.

Ingredients for Maple Syrup Coffee with Cinnamon Spice

Ingredients to make a cafe au lait with maple and cinnamon.

Hot, Strong Brewed Coffee: Put your morning coffee on to brew as usual.

Ground Cinnamon: Did you know you could add cinnamon to coffee? You can, and you should, and you will when you make this lovely morning coffee.

Pure Maple Syrup: Maple syrup in coffee adds sweetness and a lovely hint of maple flavor.

Unflavored Collagen Powder: Adds protein and a lot of nutrients to your morning coffee – this is the collagen that I like to use.

Milk: You can use whatever milk you prefer (dairy or non-dairy) to make a homemade cafe au lait. I recommend using 2% or whole dairy milk.

See recipe card below for a full list of ingredients and measurements.

Recipe Variations and Substitutions

  • Skip the collagen. If you do not have or do not supplement your diet with collagen, just skip this step. Your coffee will be wonderful without it too.
  • Use espresso instead of coffee. I love brewing espresso at home in my moka pot! If you’d prefer to use espresso in this recipe, flip the coffee-to-milk ratio listed in the recipe card. Fill your glass about ¼ full with hot, freshly brewed espresso (¼ C – ⅓ C of espresso will be more than enough), and then top with milk.

How to Make Cinnamon Coffee with Maple Syrup

Brew your morning coffee as usual.

In a liquid measuring cup, add milk, maple syrup and a few dashes of cinnamon. Heat in the microwave for 30 seconds to 1 minute to warm up.

Add 1 scoop of collagen to the warm milk mixture and froth with a handheld milk frother.

Pour coffee into your mug, filling it about ⅔ full.

Top with frothed milk mixture and a few additional dashes of cinnamon, then enjoy!

Maple Cinnamon Coffee Expert Tips

Want to reduce the number of dishes you use? Warm and froth the milk mixture in the mug you plan to use instead. If you don’t care too much about the amount of frothy milk on top of your cafe au lait, warm and froth the milk mixture in the mug you plan to use and top with coffee instead. Add the dashes of cinnamon on top and enjoy!

What collagen powder should I use for this coffee with collagen? I like and use Vital Proteins unflavored collagen peptides powder, but you can use whatever unflavored collagen powder brand you like in this coffee recipe!

Use pure maple syrup! If you are going to put maple syrup in coffee, make sure you’re using the good stuff! I do not recommend using pancake syrup in your coffee.

Maple Coffee FAQs

How to froth milk without a frother?

If you do not have a handheld milk frother, you have a few different options.

Option 1: Place warm milk into a blender and blend until doubled in size.

Option 2: Place warmed milk into a large jar, seal the lid tightly, and shake until the volume has increased (shaking vigorously for about 1 minute).

Option 3: Warm your milk on the stove over medium heat until starting to steam (do not boil!). Turn off the stove and whisk until frothy.

What is the best milk to use for a cafe au lait?

You can use any type of milk you like to make your maple cinnamon coffee with collagen.
Dairy milk: 2% or whole milk are both great options. Note: the higher the fat content is in your milk, the better it will froth.
Non-dairy milk: oat milk or almond milk are both good alternatives to dairy milk. If you have another non-dairy milk preference, go for it!

Helpful Equipment

  • A way to brew your morning coffee, such as a standard drip coffee maker or French press.
  • A handheld milk frother is a great, relatively inexpensive tool, that can help you really up your at home coffee game.
  • Coffee mugs are a must.
