Homemade Pumpkin Spice Latte Syrup

Homemade pumpkin syrup is an easy way to sweeten and add pumpkin spice flavor to coffees, teas, hot chocolate, and so much more! Have fun making your own pumpkin spice drinks this fall season with this easy Starbucks pumpkin spice syrup copycat recipe. We’ve been making our own simple syrups for over 10 years now, and once you start making your own, you won’t buy those premade syrups ever again!

This pumpkin syrup recipe is an easy and cost-effective way to bring all those cozy fall flavors to your morning coffee, afternoon tea, evening cocktails, and so much more! As someone who absolutely loves creating homemade drinks and has developed over 80 DIY drink recipes for this site (and counting!), I can tell you that making your own flavored syrups is not only fun and easy to do, but it also saves you money while giving you complete control over the sweetness and spice levels. With just a few pantry staples and about 10 minutes of your time, you’ll have a homemade pumpkin spice syrup that rivals any coffee shop version.

I’ve been creating homemade simple syrups for nearly 15 years now, and this pumpkin spice version has become a seasonal staple in our kitchen. What started as a way to recreate our favorite fall coffee drinks at home (I’m looking at you pumpkin spice latte) has evolved into a versatile syrup that we use in everything from lattes and hot chocolate to cocktails and mocktails. Through countless batches and taste tests, I’ve fine-tuned the spice blend and sweetness level to create a syrup that captures that authentic pumpkin spice flavor without being overly sweet or artificial tasting.

Why You’ll Love this Homemade Pumpkin Syrup

Perfect pumpkin flavor. If fall means all things pumpkin for you, this pumpkin syrup is the perfect addition to your fridge! Add it to regular coffee, make copycat Starbucks pumpkin spice lattes, make a pumpkin chai tea latte, add it to cold brew coffee drinks … the possibilities are endless!

Minimal, simple ingredients. All you need is a handful of common pantry ingredients to make your own pumpkin spice syrup. 

Cost effective. If you love flavored syrups, you know how expensive the store-bought versions can be! This homemade version is a great way to save some money and still enjoy a coffeeshop worthy drink.

It can also be used for pancakes, French toast, and waffles! This versatile syrup is a great addition to your weekend breakfast spread too! Can you even image how awesome this would be over a big stack of pumpkin pancakes or our pecan pumpkin waffles?!

Pumpkin Syrup Ingredients

Ingredients needed to make homemade pumpkin spice syrup.
  • Real Pumpkin Puree. No fake pumpkin flavorings for us! Using actual pumpkin adds the very best pumpkin flavor! You can use canned pumpkin puree or homemade pumpkin puree if you make your own for this recipe.
  • Granulated Sugar AND Brown Sugar. Granulated sugar is a standard ingredient for simple syrup recipes. Using brown sugar in addition to the white sugar takes our fall syrup recipe to the next level. In addition to adding a nice depth of flavor, it really makes this rich simple syrup mimic those syrups you see being used at your local coffee shop. Both light brown sugar and dark brown sugar work in this recipe. Just use what you have on hand! Light brown sugar has a more subtle flavor due to a lower molasses content than dark brown sugar.
  • Cinnamon, Nutmeg, Ginger, and Clove. We’re using a combination of four popular fall spices to create the perfect blend for our pumpkin syrup.
  • Water. Water is a must for making any kind of simple syrup. 
  • Vanilla extract. Vanilla extract adds depth of flavor and is a must for this homemade pumpkin coffee syrup recipe. I personally love and use Watkins Vanilla Extract. If you make your own vanilla extract, you can definitely use that in this recipe too.

Helpful Equipment

A fine mesh sieve is super helpful for straining out the any pumpkin pulp from the syrup (which you can leave in if you want, it’s really a personal preference thing). I actually end up using my fine mesh sieve a ton in my kitchen, so would say it’s a great addition to your kitchen tools if you do not have one.

Pumpkin Syrup Recipe Variations

Substitute our spice blend with premade pumpkin pie spice. Using pumpkin pie spice makes your life easy, minimizing the amount of spices you need to purchase and the amount of ingredients you need to measure. You can find premade pumpkin pie spice in your local grocery store’s spice aisle.

How to Make Pumpkin Syrup for Coffee

Add the pumpkin puree, brown sugar, granulated sugar, water, and spices to a small or medium saucepan over medium heat.

Whisk to combine. Simmer over medium heat, whisking occasionally until the sugar dissolves and the syrup begins to thicken (approximately 10 minutes).

Once the syrup appears mostly clear, remove from heat and stir in the vanilla extract.

Optional (but recommended), pour the pumpkin syrup through a fine mesh strainer to remove any pulp.

Allow the syrup to cool to room temperature and transfer to an airtight container of your choice.

Store in the fridge for 1-2 weeks. Shake well before using to re-distribute the spices.

Storage

Store your homemade pumpkin simple syrup in an airtight container in your fridge for up to two weeks. I like to use sealed glass bottle when making my own simple syrups. However, you can use an upcycled glass jar or a mason jar for storage too!

Ways to Use Pumpkin Spice Latte Syrup

There are tons of ways to use pumpkin spice sauce! Here are a few fun suggestions:

  • Make a pumpkin spice latte at home.
  • Use to sweeten a plain cup of coffee.
  • Add it to hot chocolate for a fun seasonal twist.
  • Use it to sweeten a fall cocktail, such as our pumpkin spice espresso martini recipe!
  • Use it as a breakfast syrup over pancakes, waffles, or French toast. It’d be great on our French toast casserole too!
  • Stir it into oatmeal or overnight oats.
  • Stir it into plain or vanilla yogurt.
  • Use it to sweeten and add spice to homemade whipped cream.
  • Drizzle it over ice cream! Try it over your favorite vanilla ice cream or on a cinnamon ice cream.

Pumpkin Pie Spice Syrup Recipe FAQs

What is the difference between pumpkin puree vs. pumpkin pie filling?

The difference is extra ingredients! Canned pumpkin puree, or 100% pure pumpkin, only contains cooked and mashed pumpkin. That’s it! Pumpkin pie filling has cooked and mashed pumpkin as well as added flavors and spices, as well as added sugars too. Using 100% pumpkin allows you to customize your dishes, adding in the spices desired and adding in the amount and type of sweetness needed for your recipe if required. For this reason, 100% pure pumpkin puree should be used in this recipe. 

What is Simple Syrup?

Simple syrup is a liquefied form of sugar that is often used to sweeten cocktail recipes, mocktail recipes, iced teas, and iced coffees. Using a liquid sweetener allows iced drinks to be sweetened without adding a grainy texture, creating a more enjoyable sip. A plain simple syrup is made with equal parts water to sugar.

Ingredients
  

  • 1 Cup water
  • ½ Cup brown sugar (light or dark)
  • ½ Cup granulated sugar
  • ⅓ Cup 100% pumpkin puree (NOT pumpkin pie filling)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • 1 teaspoon vanilla extract

Instructions
 

  • Add the pumpkin puree, brown sugar, granulated sugar, water, and spices to a small or medium saucepan and stir with a whisk. 
  • Simmer over medium heat, whisking occasionally until the sugar dissolves and the syrup begins to thicken (approximately 10 minutes).
  • Remove from heat, stir in the vanilla extract, and allow the syrup to cool to room temperature.
  • (Optional, but recommended) pour the pumpkin syrup through a fine mesh strainer to remove pulp, have the smoothest pumpkin sauce. 
  • Transfer the cooled syrup to an air-tight container.
  • Store in the fridge for 1-2 weeks. Shake well before using to re-distribute the spices.
