This delicious cookie butter latte recipe is a MUST TRY for those who love Biscoff cookie spread and/or Lotus Biscoff cookies! Ready in minutes and made with four simple ingredients, this cookie butter latte is decadent and packed with awesome cookie butter flavor.
As you probably know by now, I love making DIY fancy coffees at home. They’re fun, they’re cost effective, and I love having a variety of coffee options to choose from.
Apparently at some point in 2021 the cookie butter latte was a “secret menu drink” at Starbucks. These off-menu drinks are generally popularized on TikTok, and are drinks customers and baristas have created on their own by making modifications to regular menu drinks. Starbucks baristas are not trained how to make them, and oftentimes don’t know what they are. But coffee + cookie butter was too hard to resist, so I decided to create the ultimate DIY version.
I first fell in love with Biscoff cookies on an airplane, as these yummy cookies are often one of the choices on Delta Airlines flights. And then I learned about cookie butter… oh. my. goodness.
If you’ve ever enjoyed a big spoonful of Biscoff spread (or perhaps like to sneak a spoonful of cookie butter when your kids aren’t looking), this latte may be your new favorite drink! I’ve spent time perfecting this recipe, keeping the main recipe list simple with optional toppings you can choose from if desired.

Why You’ll Love This Cookie Butter Latte Recipe
Get your caffeine boost with all the joys of COOKIE BUTTER. I mean… is there really anything else you need to say?!
Quick and easy to make! Measure, mix, and enjoy. It’s really that simple!
Ingredients Needed for a Biscoff Latte
- Hot espresso. A true latte is officially made using espresso coffee. See the ‘Recipe Substitutions and Variations’ section below for how to make this cookie butter latte recipe with coffee if you do not make espresso at home.
- Lotus Biscoff Cookie Butter (or Trader Joe’s Cookie Butter). This is the star ingredient (and in my opinion, the best part) of this fun latte recipe! Added in the latte and as a drizzle on top too.
- Milk of choice. I prefer to use dairy milk, and recommend using 2% milk or whole milk when making lattes. One of my favorite dairy milk alternatives for coffee recipes is oat milk as it still creates a lovely and creamy latte. However, you can use whatever dairy-free milk you prefer like unsweetened almond milk, cashew milk, soy milk, etc.
- Whipped cream. While this *technically* could be optional, I do not recommend skipping it! Used on top of your latte, choose homemade whipped cream or canned squirt whipped cream… whatever you like! Whichever you choose, be generous with it on your delicious Biscoff latte.
- Additional optional toppings:
- Biscoff cookie crumbles. I mean, you really can’t go wrong when adding some crushed Biscoff cookie pieces on top of this latte.
- A sprinkle of cinnamon. This plays nicely off of the warm spices in the cookie butter. A nice dash of cinnamon will sit nicely on frothed milk or whipped cream.
See the recipe card below for a full list of ingredients and measurements.
Biscoff Coffee Recipe Variations
- Use strongly brewed coffee instead of espresso. Don’t have a way to make espresso at home? No worries! Brew strong coffee instead by increasing the amount of coffee grounds used in your normal brewing method to make a more concentrated coffee. A good place to start is by adding one or two extra scoops of grounds to your normal brewing method.
- Add more sweetness with brown sugar or a few pumps of brown sugar syrup. I personally do not find that this cookie butter latte needs any more sweetness, but everyone has different preferences. 1 teaspoon of brown sugar added along with your cookie butter should do the trick. Or if you’ve made homemade brown sugar syrup (or like to use the Torani or Monin premade simply syrups) add a pump or two to meet your sweetness preference.
- Add a caramel drizzle. Want to add some fun toppings but not take the time to warm up more cookie butter? Use a drizzle of caramel sauce on top instead!
- Make it into an iced Biscoff latte. Perfect an iced latte to a hot Biscoff latte? No problem! Simply add the cookie butter and hot espresso to a tall glass and stir to combine and melt the cookie spread. Fill the glass with ice and top with cold milk. Add optional toppings if desired and enjoy!
Step-by-Step Instructions
Step 1 – Brew espresso (or strong coffee) and set aside.
Step 2: Place cookie butter into your mug.
Step 3: Pour hot espresso (or strongly brewed coffee) onto the cookie butter.
Step 4: Stir to combine / melt the cookie butter.
Step 5: Heat milk and then use a handheld frother to make it frothy/foamy.
Step 6: Pour the frothed hot milk over the coffee and cookie butter mixture in your mug. Spoon milk foam on the very top.
Step 7: Top with whipped cream.
Step 8: Place a scoop of cookie butter into a small, microwave safe bowl and warm it up for 30 seconds. Drizzle melted cookie butter on top of the whipped cream.
Step 9: Optionally sprinkle crushed Biscoff cookie pieces on the very top.
Possible Dietary Restrictions?
This recipe is vegan and vegetarian as written. According to the Lotus website, Lotus Biscoff Cookie Butter is vegan friendly! Be sure to select a non-dairy milk for a vegan latte.
Cookie Butter Latte Expert Tips
Make sure to use a liquid measuring cup (or vessel) that has at least 2x the capacity needed for the milk. Bigger is better here because frothing your milk will nearly double your liquid’s volume! Having a large enough liquid measuring cup (or whatever vessel/mug you want to use) to heat your milk in helps ensure you’re not creating a tidal wave over the edge (I maybe know this from experience…learn from my mess, no need to create your own).
Helpful Equipment
- Handheld Milk Frother – an inexpensive and small piece of equipment that can be used daily!
- If you’d like to make espresso at home, but don’t want the expense (or size) of an espresso machine, a Moka Pot is a great investment! I love and use mine a ton.
Biscoff Latte Recipe FAQs
Speculoos cookies are the generic name for the style of cookie that the Lotus company calls Biscoff (it was originally called Lotus Speculoos and was rebranded in the US). This crunchy, spicy cookie originated in Belgium and is often made around Christmastime to celebrate St. Nicholas Day (or Sinterklaas).
Yes! Biscoff cookie butter is also known as Biscoff spread or speculoos spread. This yummy spread is made from crushed speculoos cookies and has a texture that is similar to smooth peanut butter.
Biscoff cookies, also know as speculoos or speculas, are a crunchy style of cookie (or biscuit) that has warm winter spices like cinnamon, nutmeg, and ginger. Some say they have a deep caramel flavor as well.
A single shot of espresso coffee is approximately 1 oz of fluid coffee. Therefore two shots of espresso (often called a double shot of espresso) is approximately 2 oz, which is the same volume in ¼ cup.

Notes
- Use strongly brewed coffee instead of espresso. Don’t have a way to make espresso at home? No worries!
